Aloo Gobi

Ingredients

  • 2 medium potatoes, peeled and cubed
  • 2-3 cups cauliflower florets
  • 1 medium onion, finely chopped
  • 2 small tomatoes, finely chopped
  • 1-2 green chilies, chopped
  • 1-2 tsp ginger-garlic paste
  • 2-3 tbsp oil
  • 0.5 tsp cumin seeds
  • 0.25 tsp turmeric powder
  • 0.75-1 tsp red chili powder
  • 1 tsp coriander powder
  • 0.5 tsp roasted cumin powder
  • 1-1.5 tsp garam masala
  • 0.5-1 tsp amchur (dry mango powder)
  • 0.5-1 tsp kasuri methi (crushed)
  • Fresh coriander (cilantro)
  • Lemon juice
  • Salt to taste

Instructions

  1. Rinse and cut potatoes and cauliflower into medium pieces
  2. Soak cauliflower in salted hot water for 5-10 minutes if desired
  3. Heat oil in a heavy pan and add cumin seeds
  4. Add onion and green chili, sauté until soft and lightly golden
  5. Add ginger-garlic paste and sauté until raw smell is gone
  6. On low heat, add turmeric, chili, coriander, and roasted cumin powders with salt
  7. Sauté a few seconds until aromatic, do not burn spices
  8. Add tomatoes, mix well, and cook covered until soft and mushy
  9. Add potatoes, stir-fry 2-3 minutes to coat with masala
  10. Cover and cook on low-medium, stirring occasionally
  11. When potatoes are half-cooked, add cauliflower, mix and stir-fry 3 minutes
  12. Continue cooking until potatoes are soft and cauliflower is tender
  13. Add garam masala, kasuri methi, and amchur
  14. Adjust salt and spice, garnish with coriander and lemon juice
