Aloo Paratha

Ingredients

  • 2 cups whole wheat flour
  • 1 tsp salt
  • 1-2 tbsp oil or ghee
  • 0.75-1 cup warm water
  • 3 medium potatoes, boiled and cooled
  • 1-2 green chilies, finely chopped
  • 2-3 tbsp fresh coriander
  • 0.5-1 tsp grated ginger
  • 0.75 tsp salt for filling
  • 0.5 tsp roasted cumin powder
  • 0.5 tsp garam masala
  • 0.5-1 tsp amchur (dry mango powder)
  • 0.25 tsp red chili powder
  • Ghee or oil for cooking

Instructions

  1. Make dough following plain paratha method, rest 20-30 minutes
  2. Mash cooled potatoes very finely with no lumps
  3. Add chilies, coriander, ginger, salt, roasted cumin, garam masala, amchur, chili powder
  4. Mix thoroughly, taste and adjust seasoning
  5. Divide filling into 8 portions and dough into 8 balls
  6. Take dough ball, dust lightly and roll into small disc (10-12cm)
  7. Place filling in center, bring edges over filling, pleat and seal at top
  8. Gently flatten with palm, rest 1-2 minutes
  9. Dust with flour and gently roll from center outwards into 16-18cm circle
  10. Heat tawa on medium-high, place paratha on tawa
  11. When bubbles appear, flip
  12. Drizzle 1-2 tsp ghee around edges and on top
  13. When golden spots appear, flip again, press gently
  14. Cook until both sides are golden and crisp
  15. Serve hot with butter, yogurt, and pickle
