Andhra Chicken Curry

Ingredients

  • 750g-1kg bone-in chicken
  • 3 large onions, finely sliced
  • 2 medium tomatoes, chopped
  • 2 tbsp ginger-garlic paste
  • 3-5 green chillies, slit
  • 1.5-2 tbsp red chilli powder
  • 2 tsp coriander powder
  • 0.5 tsp turmeric powder
  • 1 tsp garam masala
  • Handful fresh coriander leaves
  • 1-2 tsp lemon juice
  • Salt to taste
  • 3-4 tbsp oil
  • 1 tbsp poppy seeds, soaked, optional
  • 2 tbsp grated coconut, optional

Instructions

  1. Marinate chicken with salt, turmeric, 1 tbsp ginger-garlic paste and 1 tsp chilli powder, rest 30 minutes
  2. Heat oil, add sliced onions, fry until golden-brown
  3. Add remaining ginger-garlic paste and green chillies, sauté till raw smell goes
  4. Add tomatoes, cook till soft and oil separates
  5. Add chilli and coriander powder and salt, fry 1-2 minutes
  6. Add marinated chicken, mix well, sauté on medium-high 5-7 minutes till it starts to sear
  7. Add 1-1.5 cups hot water for gravy, cover and cook on low till chicken is tender
  8. Stir in ground poppy seed-coconut paste if using, simmer 5-7 minutes
  9. Add garam masala and adjust salt and chilli, simmer 2-3 minutes
  10. Finish with coriander leaves and lemon juice
  11. Rest covered 10 minutes
  12. Serve with steamed rice, pulao, dosa, or roti
