Appam (Kerala Soft Pancakes)

Ingredients

  • 1.5 cups rice flour
  • 0.5 cup coconut milk
  • 0.5 cup thin yogurt
  • 0.5 tsp salt
  • 0.25 tsp sugar
  • 0.5 cup hot water
  • Oil or coconut oil for cooking
  • Optional: 0.25 tsp baking soda added just before cooking

Instructions

  1. Mix rice flour and coconut milk to a smooth paste
  2. Add yogurt, salt and sugar, mix well
  3. Gradually add hot water to get a batter similar to thin dosa batter (should flow easily)
  4. Let batter rest 1-2 hours at room temperature
  5. Before cooking, add baking soda if using, mix gently
  6. Heat appam pan (special pan with bowl-shaped depressions) and oil it lightly
  7. Pour batter into each depression, filling about 3/4 full
  8. Cover with lid and cook on medium till edges are crispy and golden (2-3 minutes)
  9. The center should remain soft and slightly spongy
  10. Remove with a spoon
  11. Serve hot with vegetable stew, egg curry, or chicken curry
  12. Lacy edges and soft center are characteristic
