Appam (Kerala Soft Pancakes)

Ingredients
- 1.5 cups rice flour
- 0.5 cup coconut milk
- 0.5 cup thin yogurt
- 0.5 tsp salt
- 0.25 tsp sugar
- 0.5 cup hot water
- Oil or coconut oil for cooking
- Optional: 0.25 tsp baking soda added just before cooking
Instructions
- Mix rice flour and coconut milk to a smooth paste
- Add yogurt, salt and sugar, mix well
- Gradually add hot water to get a batter similar to thin dosa batter (should flow easily)
- Let batter rest 1-2 hours at room temperature
- Before cooking, add baking soda if using, mix gently
- Heat appam pan (special pan with bowl-shaped depressions) and oil it lightly
- Pour batter into each depression, filling about 3/4 full
- Cover with lid and cook on medium till edges are crispy and golden (2-3 minutes)
- The center should remain soft and slightly spongy
- Remove with a spoon
- Serve hot with vegetable stew, egg curry, or chicken curry
- Lacy edges and soft center are characteristic
