Avial (Kerala Mixed Vegetable Curry)

Ingredients
- 1 medium carrot, julienned
- 1 medium potato, julienned
- 0.5 cup green beans, cut lengthwise
- 0.5 cup cucumber, julienned
- 0.5 cup pumpkin, julienned
- 0.5 cup coconut, freshly grated
- 3-4 green chilies, slit lengthwise
- 0.5 inch ginger, sliced
- 0.5 cup yogurt or thin coconut milk
- 1 tbsp coconut oil
- 1 tsp mustard seeds
- 0.5 tsp cumin seeds
- Pinch turmeric powder
- 10-12 curry leaves
- Salt to taste
Instructions
- Heat coconut oil, add mustard and cumin seeds, let splutter
- Add curry leaves, turmeric and ginger slices
- Add grated coconut and fry briefly till fragrant
- Add all julienned vegetables, mix well
- Cover and cook on medium till vegetables are just tender (6-8 minutes)
- In a bowl, whisk yogurt or coconut milk with green chilies
- Pour this mixture over the vegetables
- Mix gently and cook on low without boiling for 2-3 minutes
- Add salt to taste
- Remove from heat
- Serve warm as part of South Indian lunch with rice
