Avial (Kerala Mixed Vegetable Curry)

Ingredients

  • 1 medium carrot, julienned
  • 1 medium potato, julienned
  • 0.5 cup green beans, cut lengthwise
  • 0.5 cup cucumber, julienned
  • 0.5 cup pumpkin, julienned
  • 0.5 cup coconut, freshly grated
  • 3-4 green chilies, slit lengthwise
  • 0.5 inch ginger, sliced
  • 0.5 cup yogurt or thin coconut milk
  • 1 tbsp coconut oil
  • 1 tsp mustard seeds
  • 0.5 tsp cumin seeds
  • Pinch turmeric powder
  • 10-12 curry leaves
  • Salt to taste

Instructions

  1. Heat coconut oil, add mustard and cumin seeds, let splutter
  2. Add curry leaves, turmeric and ginger slices
  3. Add grated coconut and fry briefly till fragrant
  4. Add all julienned vegetables, mix well
  5. Cover and cook on medium till vegetables are just tender (6-8 minutes)
  6. In a bowl, whisk yogurt or coconut milk with green chilies
  7. Pour this mixture over the vegetables
  8. Mix gently and cook on low without boiling for 2-3 minutes
  9. Add salt to taste
  10. Remove from heat
  11. Serve warm as part of South Indian lunch with rice
