Ingredients

  • 500 g all-purpose flour
  • 7 g instant yeast
  • 200 ml warm milk
  • 2 whole egg yolk
  • 100 g butter
  • 1 tsp salt
  • 50 g sugar
  • 2 tsp cinnamon
  • 100 g brown sugar
  • 100 g raisins

Instructions

  1. Mix yeast with warm milk and 1 tbsp sugar, let sit 5 minutes
  2. Combine flour and salt, make well in center
  3. Add yeast mixture and egg yolks, mix until dough forms
  4. Knead in softened butter gradually until smooth and elastic, about 10 minutes
  5. Place in oiled bowl, cover, let rise 1.5 hours until doubled
  6. Mix cinnamon, brown sugar, and raisins
  7. Roll dough into rectangle, spread with cinnamon-sugar mixture
  8. Roll up tightly from long side, place in oiled loaf pan
  9. Cover and let rise 1 hour until risen above pan
  10. Bake at 180°C for 35-40 minutes until golden and hollow-sounding when tapped
