Baingan Bharta (Mashed Eggplant)

Ingredients
- 3-4 large eggplants (brinjal)
- 2 medium onions, finely chopped
- 3 medium tomatoes, finely chopped
- 1-2 tsp ginger-garlic paste
- 1-2 green chilies, finely chopped
- 2-3 tbsp oil or ghee
- 0.5 tsp cumin seeds
- 0.5 tsp turmeric powder
- 1 tsp coriander powder
- 0.5 tsp garam masala
- Salt to taste
- Fresh coriander for garnish
Instructions
- Char eggplants on open flame or under broiler until skin is blackened all over and flesh is soft
- Cool and peel off blackened skin
- Mash the soft flesh coarsely, remove excess water if needed
- Heat oil, add cumin seeds and let splutter
- Add onions and sauté till golden
- Add ginger-garlic paste and green chilies, cook till raw smell is gone
- Add mashed eggplant and cook on medium 3-4 minutes
- Add tomatoes and spices (turmeric, coriander, salt)
- Cook on medium till tomatoes are soft and mixture is well combined (8-10 minutes)
- Add garam masala
- Garnish with fresh coriander
- Serve hot with roti, paratha, or with rice
