Baingan Bharta (Mashed Eggplant)

Ingredients

  • 3-4 large eggplants (brinjal)
  • 2 medium onions, finely chopped
  • 3 medium tomatoes, finely chopped
  • 1-2 tsp ginger-garlic paste
  • 1-2 green chilies, finely chopped
  • 2-3 tbsp oil or ghee
  • 0.5 tsp cumin seeds
  • 0.5 tsp turmeric powder
  • 1 tsp coriander powder
  • 0.5 tsp garam masala
  • Salt to taste
  • Fresh coriander for garnish

Instructions

  1. Char eggplants on open flame or under broiler until skin is blackened all over and flesh is soft
  2. Cool and peel off blackened skin
  3. Mash the soft flesh coarsely, remove excess water if needed
  4. Heat oil, add cumin seeds and let splutter
  5. Add onions and sauté till golden
  6. Add ginger-garlic paste and green chilies, cook till raw smell is gone
  7. Add mashed eggplant and cook on medium 3-4 minutes
  8. Add tomatoes and spices (turmeric, coriander, salt)
  9. Cook on medium till tomatoes are soft and mixture is well combined (8-10 minutes)
  10. Add garam masala
  11. Garnish with fresh coriander
  12. Serve hot with roti, paratha, or with rice
