Banh Mi (Vietnamese Sandwich)

Ingredients
- 4 pieces baguette
- 4 oz pâté
- 8 oz Vietnamese cold cuts
- 2 whole carrots
- 1 whole daikon radish
- 0.5 cup rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- 0.5 cup water
- 0.5 bunch fresh cilantro
- 2 whole fresh jalapeños
- 3 tbsp mayonnaise
Instructions
- Julienne carrots and daikon radish
- Heat vinegar, sugar, salt, and water until warm
- Pour over vegetables and let sit at least 30 minutes
- Toast baguettes in oven for 5 minutes at 350°F
- Slice baguettes lengthwise
- Spread pâté on bottom half
- Spread mayonnaise on top half
- Layer cold cuts on bottom half
- Drain pickled vegetables and layer on top
- Add fresh cilantro and sliced jalapeños
- Close sandwich
- Cut into portions
- Serve immediately
