Banh Mi (Vietnamese Sandwich)

Ingredients

  • 4 pieces baguette
  • 4 oz pâté
  • 8 oz Vietnamese cold cuts
  • 2 whole carrots
  • 1 whole daikon radish
  • 0.5 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 0.5 cup water
  • 0.5 bunch fresh cilantro
  • 2 whole fresh jalapeños
  • 3 tbsp mayonnaise

Instructions

  1. Julienne carrots and daikon radish
  2. Heat vinegar, sugar, salt, and water until warm
  3. Pour over vegetables and let sit at least 30 minutes
  4. Toast baguettes in oven for 5 minutes at 350°F
  5. Slice baguettes lengthwise
  6. Spread pâté on bottom half
  7. Spread mayonnaise on top half
  8. Layer cold cuts on bottom half
  9. Drain pickled vegetables and layer on top
  10. Add fresh cilantro and sliced jalapeños
  11. Close sandwich
  12. Cut into portions
  13. Serve immediately
