Batani Pulav (Peas Pulav)

Ingredients
- 1.5 cups basmati rice
- 1.5 cups fresh peas or frozen
- 2 medium onions, sliced
- 3 tbsp ghee or oil
- 2 bay leaves
- 4-5 cloves
- 4-5 green cardamom
- 1 inch cinnamon stick
- 1 tsp cumin seeds
- 3 cups vegetable or chicken stock
- Salt to taste
- Fresh coriander for garnish
Instructions
- Soak rice in water for 20-30 minutes, drain
- Heat ghee, add sliced onions and sauté till golden-brown, remove and set aside
- In same ghee, add cumin seeds and whole spices, fry till aromatic
- Add soaked rice and stir-fry for 2-3 minutes
- Add peas and mix well
- Pour hot stock and add salt
- Bring to boil, cover and cook on low heat till rice is cooked and liquid is absorbed (15-18 minutes)
- Let steam in covered pot for 5 minutes
- Fluff gently with fork
- Top with fried onions and fresh coriander
- Serve hot with raita or any curry
