Batani Pulav (Peas Pulav)

Ingredients

  • 1.5 cups basmati rice
  • 1.5 cups fresh peas or frozen
  • 2 medium onions, sliced
  • 3 tbsp ghee or oil
  • 2 bay leaves
  • 4-5 cloves
  • 4-5 green cardamom
  • 1 inch cinnamon stick
  • 1 tsp cumin seeds
  • 3 cups vegetable or chicken stock
  • Salt to taste
  • Fresh coriander for garnish

Instructions

  1. Soak rice in water for 20-30 minutes, drain
  2. Heat ghee, add sliced onions and sauté till golden-brown, remove and set aside
  3. In same ghee, add cumin seeds and whole spices, fry till aromatic
  4. Add soaked rice and stir-fry for 2-3 minutes
  5. Add peas and mix well
  6. Pour hot stock and add salt
  7. Bring to boil, cover and cook on low heat till rice is cooked and liquid is absorbed (15-18 minutes)
  8. Let steam in covered pot for 5 minutes
  9. Fluff gently with fork
  10. Top with fried onions and fresh coriander
  11. Serve hot with raita or any curry
