Beef and Broccoli Stir-Fry

Ingredients

  • Beef (flank or sirloin), thinly sliced: 200g
  • Broccoli florets: 2-3 cups
  • Garlic, minced: 3-4 cloves
  • Ginger, minced: 1 tsp
  • Scallions, in 1-inch pieces: 2
  • Light soy sauce: ½ tbsp (for marinade) + ½ tbsp (for sauce)
  • Shaoxing wine: ½ tbsp (for marinade) + ½ tbsp (for sauce)
  • Oyster sauce: ½ tbsp
  • White pepper: ¼ tsp (for marinade)
  • Salt: ¼ tsp (for marinade)
  • Cornstarch: 1 tsp (for marinade)
  • Oil: ½ tbsp (for marinade) + 3-4 tbsp (for cooking)
  • Stock or water: splash if needed
  • Sugar: optional

Instructions

  1. Marinate beef with soy sauce, salt, white pepper, cornstarch, and ½ tbsp oil, rest 10-15 minutes
  2. Blanch broccoli 30-60 seconds in boiling salted water, drain
  3. Heat wok very hot, add 2-3 tbsp oil
  4. Stir-fry garlic, ginger, scallion whites until fragrant
  5. Add beef, spread out, then stir until just cooked
  6. Add blanched broccoli, toss 30-60 seconds
  7. Add oyster sauce, soy sauce, Shaoxing wine, toss until coated
  8. Add stock/water if too dry
  9. Finish with scallion greens, adjust salt, serve with rice
