Beef and Celery Stir-Fry

Ingredients
- Beef (flank or sirloin), thinly sliced: 200g
- Light soy sauce (for marinade): ½ tbsp
- Salt (for marinade): ¼ tsp
- White pepper (for marinade): ¼ tsp
- Oil (for marinade): ½ tbsp
- Cornstarch (for marinade): 1 tsp
- Celery or Chinese celery, sliced: 1 cup
- Garlic, chopped: 8 cloves
- Ginger, chopped: 1 inch piece
- Scallions, 1-inch pieces: 2
- Fresh or dried chilies: optional
- Oil for cooking: 3-4 tbsp
- Oyster sauce: ½ tbsp
- Light soy sauce (for cooking): ½ tbsp
- Shaoxing wine: ½ tbsp
- Water or stock: splash if needed
Instructions
- Marinate beef with soy, salt, white pepper, cornstarch, and oil, rest 10-15 minutes
- Heat wok very hot, add 2-3 tbsp oil
- Stir-fry celery, garlic, ginger, scallion whites, and chilies for ~30 seconds
- Add beef, spread out, stir until just cooked
- Add oyster sauce, soy, Shaoxing wine
- Toss 30-60 seconds, adding splash of water/stock if too dry
- Finish with scallion greens, serve with rice
