Bhindi Sabzi (Okra Fry)

Ingredients

  • 500g bhindi (okra)
  • 2 medium onions, finely chopped
  • 2-3 tbsp oil
  • 0.5 tsp cumin seeds
  • 0.5 inch ginger, grated
  • 1-2 green chilies, finely chopped
  • 0.25 tsp turmeric powder
  • 0.5 tsp red chili powder
  • 1 tsp coriander powder
  • 0.5 tsp roasted cumin powder
  • 0.5-1 tsp amchur (dry mango powder)
  • Salt to taste
  • 0.5 tsp kasuri methi (crushed)
  • Fresh coriander for garnish

Instructions

  1. Wash bhindi and dry thoroughly on cloth (removes slime)
  2. Trim ends and cut into medium pieces lengthwise
  3. Heat oil, add cumin seeds and let splutter
  4. Add onions and sauté till light golden
  5. Add ginger and green chilies, cook till raw smell is gone
  6. Add turmeric, chili, coriander and roasted cumin powders
  7. Add bhindi pieces and mix well
  8. Cover and cook on medium, stirring occasionally
  9. Bhindi releases moisture initially, cook uncovered on medium-high till it dries
  10. Add amchur and kasuri methi
  11. Cook 2-3 more minutes till bhindi is tender and slightly browned
  12. Serve hot with roti or chapati
  13. Can be prepared dry (no water added) or with a bit of moisture
