Bhindi Sabzi (Okra Fry)

Ingredients
- 500g bhindi (okra)
- 2 medium onions, finely chopped
- 2-3 tbsp oil
- 0.5 tsp cumin seeds
- 0.5 inch ginger, grated
- 1-2 green chilies, finely chopped
- 0.25 tsp turmeric powder
- 0.5 tsp red chili powder
- 1 tsp coriander powder
- 0.5 tsp roasted cumin powder
- 0.5-1 tsp amchur (dry mango powder)
- Salt to taste
- 0.5 tsp kasuri methi (crushed)
- Fresh coriander for garnish
Instructions
- Wash bhindi and dry thoroughly on cloth (removes slime)
- Trim ends and cut into medium pieces lengthwise
- Heat oil, add cumin seeds and let splutter
- Add onions and sauté till light golden
- Add ginger and green chilies, cook till raw smell is gone
- Add turmeric, chili, coriander and roasted cumin powders
- Add bhindi pieces and mix well
- Cover and cook on medium, stirring occasionally
- Bhindi releases moisture initially, cook uncovered on medium-high till it dries
- Add amchur and kasuri methi
- Cook 2-3 more minutes till bhindi is tender and slightly browned
- Serve hot with roti or chapati
- Can be prepared dry (no water added) or with a bit of moisture
