Ingredients

  • 500 g beef brisket
  • 400 g beets
  • 300 g cabbage
  • 2 medium carrot
  • 2 medium potato
  • 1 large onion
  • 2 tbsp tomato paste
  • 1500 ml beef broth
  • 2 tbsp apple cider vinegar
  • 1 tsp sugar
  • 2 whole bay leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 100 g sour cream

Instructions

  1. Cut beef into 2cm cubes
  2. Bring beef broth to boil, add beef and bay leaves
  3. Simmer for 1 hour until beef is tender
  4. Meanwhile, peel and grate beets, shred cabbage, dice carrot and potato
  5. Dice onion
  6. Remove beef from broth using slotted spoon, strain broth
  7. Return broth to pot, add diced onion, carrot, and potato
  8. Simmer for 15 minutes
  9. Add shredded beets, cabbage, and tomato paste
  10. Return beef to pot, add vinegar and sugar
  11. Simmer for another 15-20 minutes until vegetables are tender
  12. Season with salt and pepper
  13. Serve hot with dollop of sour cream in each bowl
