Ingredients
- 500 g beef brisket
- 400 g beets
- 300 g cabbage
- 2 medium carrot
- 2 medium potato
- 1 large onion
- 2 tbsp tomato paste
- 1500 ml beef broth
- 2 tbsp apple cider vinegar
- 1 tsp sugar
- 2 whole bay leaves
- 1 tsp salt
- 0.5 tsp black pepper
- 100 g sour cream
Instructions
- Cut beef into 2cm cubes
- Bring beef broth to boil, add beef and bay leaves
- Simmer for 1 hour until beef is tender
- Meanwhile, peel and grate beets, shred cabbage, dice carrot and potato
- Dice onion
- Remove beef from broth using slotted spoon, strain broth
- Return broth to pot, add diced onion, carrot, and potato
- Simmer for 15 minutes
- Add shredded beets, cabbage, and tomato paste
- Return beef to pot, add vinegar and sugar
- Simmer for another 15-20 minutes until vegetables are tender
- Season with salt and pepper
- Serve hot with dollop of sour cream in each bowl
