Bouillabaisse Rouille

Ingredients

  • 4 cloves Garlic
  • 0.5 g Saffron threads
  • 1 whole Red pepper (roasted)
  • 2 whole Egg yolk
  • 150 ml Extra virgin olive oil
  • 100 g Bread
  • 1 to taste Salt and cayenne

Instructions

  1. Toast bread slices, rub with cut garlic cloves.
  2. Pound saffron threads in mortar until fine powder.
  3. In blender, combine saffron, garlic cloves, roasted pepper, and egg yolks.
  4. Blend until smooth.
  5. With blender running, very slowly drizzle in olive oil to create emulsion (like mayonnaise).
  6. Season with salt and cayenne pepper.
  7. Spread on toasted bread slices or serve on the side of bouillabaisse.
