Ingredients
- 4 cloves Garlic
- 0.5 g Saffron threads
- 1 whole Red pepper (roasted)
- 2 whole Egg yolk
- 150 ml Extra virgin olive oil
- 100 g Bread
- 1 to taste Salt and cayenne
Instructions
- Toast bread slices, rub with cut garlic cloves.
- Pound saffron threads in mortar until fine powder.
- In blender, combine saffron, garlic cloves, roasted pepper, and egg yolks.
- Blend until smooth.
- With blender running, very slowly drizzle in olive oil to create emulsion (like mayonnaise).
- Season with salt and cayenne pepper.
- Spread on toasted bread slices or serve on the side of bouillabaisse.
