Branzino in Crosta di Sale

Ingredients

  • 1 fish (1.5kg) Whole branzino (or sea bass)
  • 1.5 kg Sea salt
  • 6 whole Egg whites
  • 2 sprigs Fresh herbs (rosemary, thyme)
  • 1 whole Lemon
  • 3 tbsp Olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Clean fish, remove scales if desired, keep fish whole.
  3. In large bowl, mix sea salt with egg whites until it reaches consistency of wet sand.
  4. Stuff fish cavity with lemon slices and herb sprigs.
  5. Spread thin layer of salt mixture on baking sheet.
  6. Place fish on top.
  7. Completely encase fish with remaining salt mixture, packing it firmly.
  8. Bake for 20-25 minutes (10-12 minutes per pound of fish).
  9. Remove from oven, let rest for 5 minutes.
  10. Crack open salt crust carefully.
  11. Fillet fish and serve with olive oil and fresh lemon juice.
