Branzino in Crosta di Sale

Ingredients
- 1 fish (1.5kg) Whole branzino (or sea bass)
- 1.5 kg Sea salt
- 6 whole Egg whites
- 2 sprigs Fresh herbs (rosemary, thyme)
- 1 whole Lemon
- 3 tbsp Olive oil
Instructions
- Preheat oven to 400°F (200°C).
- Clean fish, remove scales if desired, keep fish whole.
- In large bowl, mix sea salt with egg whites until it reaches consistency of wet sand.
- Stuff fish cavity with lemon slices and herb sprigs.
- Spread thin layer of salt mixture on baking sheet.
- Place fish on top.
- Completely encase fish with remaining salt mixture, packing it firmly.
- Bake for 20-25 minutes (10-12 minutes per pound of fish).
- Remove from oven, let rest for 5 minutes.
- Crack open salt crust carefully.
- Fillet fish and serve with olive oil and fresh lemon juice.
