Bun Cha (Vietnamese Grilled Pork with Noodles)

Ingredients

  • 1.5 lbs ground pork
  • 3 tbsp fish sauce
  • 5 cloves garlic
  • 0.5 whole onion
  • 2 tbsp brown sugar
  • 8 oz rice vermicelli
  • 0.5 head lettuce
  • 1 bunch fresh herbs
  • 1 whole cucumber
  • 1 whole carrots
  • 0.25 whole daikon radish
  • 0.5 cup peanuts
  • 3 tbsp lime juice
  • 0.5 cup water

Instructions

  1. Mince garlic and onion
  2. Mix ground pork, fish sauce, garlic, onion, and brown sugar
  3. Form into patties or small balls
  4. Grill or pan-fry until cooked through
  5. Cook rice vermicelli until soft, drain and cool
  6. Make pickled vegetables from carrots and daikon
  7. Prepare dipping sauce: fish sauce, lime juice, water, and minced garlic
  8. Chop fresh herbs
  9. Slice cucumber and lettuce
  10. In serving bowls, place vermicelli as base
  11. Top with grilled pork, lettuce, herbs, vegetables
  12. Drizzle with dipping sauce
  13. Top with crushed peanuts
  14. Serve immediately
