Canh Chua Ca (Vietnamese Sour Fish Soup)

Ingredients
- 1.5 lbs fish fillets
- 2 quarts fish broth
- 3 whole tomato
- 1 cup pineapple
- 3 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp sugar
- 2 whole shallots
- 2 cloves garlic
- 0.25 bunch dill
- 2 stalks scallions
- 8 oz okra
- 1 tbsp tamarind paste
Instructions
- Cut tomato into quarters
- Cut pineapple into chunks
- Slice shallots and mince garlic
- Slice okra into rings
- Cut fish fillets into chunks
- Heat broth in large pot
- Add shallots and garlic, simmer for 5 minutes
- Add tomato and pineapple, simmer for 10 minutes
- Add tamarind paste, fish sauce, and lime juice
- Add okra and simmer for 5 minutes
- Add fish and simmer until cooked (4-5 minutes)
- Season with sugar if needed
- Garnish with fresh dill and scallions
- Serve hot
