Canh Cua (Vietnamese Crab and Asparagus Soup)

Ingredients
- 2 whole whole crab
- 2 quarts chicken or vegetable broth
- 1 lb asparagus
- 8 oz tofu
- 2 tbsp fish sauce
- 3 cloves garlic
- 2 whole shallots
- 1 inch ginger
- 1 tbsp vegetable oil
- 1 tsp salt
- 0.5 tsp black pepper
- 0.25 bunch fresh cilantro
- 2 stalks scallions
Instructions
- Clean crab and cut into pieces
- Minced garlic, shallots, and ginger
- Heat oil in pot, sauté aromatics
- Add crab pieces and stir for 2 minutes
- Add broth and bring to boil
- Simmer for 20 minutes
- Cut asparagus into 2-inch pieces
- Cut tofu into cubes
- Add asparagus and tofu to pot
- Simmer for 10 more minutes
- Season with fish sauce, salt, and pepper
- Garnish with cilantro and scallions
- Serve hot
