Canh Cua (Vietnamese Crab and Asparagus Soup)

Ingredients

  • 2 whole whole crab
  • 2 quarts chicken or vegetable broth
  • 1 lb asparagus
  • 8 oz tofu
  • 2 tbsp fish sauce
  • 3 cloves garlic
  • 2 whole shallots
  • 1 inch ginger
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 bunch fresh cilantro
  • 2 stalks scallions

Instructions

  1. Clean crab and cut into pieces
  2. Minced garlic, shallots, and ginger
  3. Heat oil in pot, sauté aromatics
  4. Add crab pieces and stir for 2 minutes
  5. Add broth and bring to boil
  6. Simmer for 20 minutes
  7. Cut asparagus into 2-inch pieces
  8. Cut tofu into cubes
  9. Add asparagus and tofu to pot
  10. Simmer for 10 more minutes
  11. Season with fish sauce, salt, and pepper
  12. Garnish with cilantro and scallions
  13. Serve hot
