Chicken and Broccoli Stir-Fry

Ingredients

  • Chicken thigh or breast, thinly sliced: 400g
  • Light soy sauce (for marinade): 1 tbsp
  • Shaoxing wine (for marinade): 1 tbsp
  • Cornstarch (for marinade): 1 tbsp
  • Salt (for marinade): ½ tsp
  • Oil (for marinade): 1 tbsp
  • Broccoli florets: 2-3 cups
  • Garlic, minced: 2-3 cloves
  • Ginger, minced: 1 tsp
  • Scallions, in sections: 2
  • Stir-fry sauce: ½-¾ cup (light soy, dark soy, stock, sesame oil, sugar, cornstarch)

Instructions

  1. Marinate chicken with soy, wine, cornstarch, salt, oil for 10-15 minutes
  2. Blanch broccoli 45-60 seconds in boiling salted water, drain
  3. Heat wok, add oil, stir-fry garlic, ginger, scallion whites until fragrant
  4. Add chicken, spread, let it color slightly, toss until mostly cooked
  5. Add broccoli, toss 30-60 seconds
  6. Stir sauce, pour in, cook until just thickened and glossy
  7. Adjust salt/soy and serve
