Ingredients
- Chicken thigh or breast, thinly sliced: 400g
- Light soy sauce (for marinade): 1 tbsp
- Shaoxing wine (for marinade): 1 tbsp
- Cornstarch (for marinade): 1 tbsp
- Salt (for marinade): ½ tsp
- Oil (for marinade): 1 tbsp
- Broccoli florets: 2-3 cups
- Garlic, minced: 2-3 cloves
- Ginger, minced: 1 tsp
- Scallions, in sections: 2
- Stir-fry sauce: ½-¾ cup (light soy, dark soy, stock, sesame oil, sugar, cornstarch)
Instructions
- Marinate chicken with soy, wine, cornstarch, salt, oil for 10-15 minutes
- Blanch broccoli 45-60 seconds in boiling salted water, drain
- Heat wok, add oil, stir-fry garlic, ginger, scallion whites until fragrant
- Add chicken, spread, let it color slightly, toss until mostly cooked
- Add broccoli, toss 30-60 seconds
- Stir sauce, pour in, cook until just thickened and glossy
- Adjust salt/soy and serve
