Chicken Fried Rice

Ingredients

  • Cooked cold white rice: 3 cups
  • Vegetable oil: 2 tbsp
  • Onion, chopped: ½ cup
  • Frozen or fresh vegetables: 6 oz
  • Cooked chicken, diced: 1 cup
  • Sesame oil: 2 tsp
  • Light soy sauce: 1-2 tbsp
  • White pepper: ½ tsp
  • Eggs: 2, lightly beaten

Instructions

  1. Whisk together sesame oil, soy sauce, and white pepper as seasoning mixture
  2. Heat vegetable oil in wok over medium-high heat, sauté onions until soft
  3. Add cooked chicken
  4. Add frozen vegetables and stir until defrosted (3-4 minutes)
  5. Add cold rice, using spatula to toss rather than stir to prevent rice from becoming soggy
  6. Add lightly beaten eggs and continue flipping until eggs are nearly cooked
  7. Add seasoning mixture and toss thoroughly
