Ingredients
- Cooked cold white rice: 3 cups
- Vegetable oil: 2 tbsp
- Onion, chopped: ½ cup
- Frozen or fresh vegetables: 6 oz
- Cooked chicken, diced: 1 cup
- Sesame oil: 2 tsp
- Light soy sauce: 1-2 tbsp
- White pepper: ½ tsp
- Eggs: 2, lightly beaten
Instructions
- Whisk together sesame oil, soy sauce, and white pepper as seasoning mixture
- Heat vegetable oil in wok over medium-high heat, sauté onions until soft
- Add cooked chicken
- Add frozen vegetables and stir until defrosted (3-4 minutes)
- Add cold rice, using spatula to toss rather than stir to prevent rice from becoming soggy
- Add lightly beaten eggs and continue flipping until eggs are nearly cooked
- Add seasoning mixture and toss thoroughly
