Ingredients
- Cold cooked white rice: 3 cups
- Eggs: 2, lightly beaten
- Neutral cooking oil: 1.5 tbsp divided
- Garlic, minced: 2 cloves
- Scallions, finely chopped: 1 stalk
- Light soy sauce: to taste
- Sesame oil: to taste
- Salt: to taste
- White pepper: to taste
Instructions
- Heat wok until smoking, scramble beaten eggs thoroughly and break into small pieces, remove
- Return wok to heat, fry minced garlic until fragrant, add cold rice
- Flip and toss constantly to heat rice evenly, breaking clumps with spatula
- Return scrambled egg to wok with scallions
- Season with light soy sauce, sesame oil, salt, and white pepper
- Stir thoroughly and serve immediately
