Chinese Egg Fried Rice (Dan Chao Fan)

Ingredients

  • Cold cooked white rice: 3 cups
  • Eggs: 2, lightly beaten
  • Neutral cooking oil: 1.5 tbsp divided
  • Garlic, minced: 2 cloves
  • Scallions, finely chopped: 1 stalk
  • Light soy sauce: to taste
  • Sesame oil: to taste
  • Salt: to taste
  • White pepper: to taste

Instructions

  1. Heat wok until smoking, scramble beaten eggs thoroughly and break into small pieces, remove
  2. Return wok to heat, fry minced garlic until fragrant, add cold rice
  3. Flip and toss constantly to heat rice evenly, breaking clumps with spatula
  4. Return scrambled egg to wok with scallions
  5. Season with light soy sauce, sesame oil, salt, and white pepper
  6. Stir thoroughly and serve immediately
