Ingredients
- Fresh wide rice noodles (ho fun): 300g
- Beef, thinly sliced: 200g
- Light soy sauce (for marinade): 1 tbsp
- Cornstarch (for marinade): ½ tbsp
- Oil (for marinade): ½ tbsp
- Chinese broccoli (gai lan) or regular broccoli: 100g
- Garlic, minced: 2-3 cloves
- Bean sprouts: ½ cup
- Scallions, chopped: 2
- Light soy sauce (for cooking): 1.5-2 tbsp
- Dark soy sauce: ½ tbsp
- Oyster sauce: 1 tbsp
- Shaoxing wine: 1 tbsp
- Sugar: ¼ tsp
- Oil for cooking: 3-4 tbsp
Instructions
- Marinate beef 10 minutes
- Heat wok very hot over high flame, add oil
- Stir-fry beef until lightly browned, remove
- Add more oil if needed, fry garlic briefly
- Add broccoli, stir-fry 1-2 minutes
- Add rice noodles (break apart gently), toss to mix
- Return beef, add soy sauces, oyster sauce, Shaoxing wine, sugar
- Toss quickly until noodles coated and sizzling
- Add bean sprouts and scallions
- Quick toss and serve immediately
