Chow Fun (Beef and Rice Noodles)

Ingredients

  • Fresh wide rice noodles (ho fun): 300g
  • Beef, thinly sliced: 200g
  • Light soy sauce (for marinade): 1 tbsp
  • Cornstarch (for marinade): ½ tbsp
  • Oil (for marinade): ½ tbsp
  • Chinese broccoli (gai lan) or regular broccoli: 100g
  • Garlic, minced: 2-3 cloves
  • Bean sprouts: ½ cup
  • Scallions, chopped: 2
  • Light soy sauce (for cooking): 1.5-2 tbsp
  • Dark soy sauce: ½ tbsp
  • Oyster sauce: 1 tbsp
  • Shaoxing wine: 1 tbsp
  • Sugar: ¼ tsp
  • Oil for cooking: 3-4 tbsp

Instructions

  1. Marinate beef 10 minutes
  2. Heat wok very hot over high flame, add oil
  3. Stir-fry beef until lightly browned, remove
  4. Add more oil if needed, fry garlic briefly
  5. Add broccoli, stir-fry 1-2 minutes
  6. Add rice noodles (break apart gently), toss to mix
  7. Return beef, add soy sauces, oyster sauce, Shaoxing wine, sugar
  8. Toss quickly until noodles coated and sizzling
  9. Add bean sprouts and scallions
  10. Quick toss and serve immediately
