Com Tam (Vietnamese Broken Rice)

Ingredients

  • 2 cups broken rice
  • 3 cups water
  • 1 tsp salt
  • 4 pieces pork chops
  • 3 tbsp fish sauce
  • 4 cloves garlic
  • 1 tbsp sugar
  • 2 tbsp lime juice
  • 2 tbsp vegetable oil
  • 4 whole eggs
  • 1 whole cucumber
  • 1 whole tomato
  • 0.25 bunch fresh cilantro
  • 1 cup pickled vegetables

Instructions

  1. Rinse broken rice
  2. Cook rice in water with salt until tender
  3. Marinate pork chops in fish sauce, minced garlic, and sugar (30 minutes)
  4. Grill or pan-fry pork chops until cooked through
  5. Fry eggs sunny-side up
  6. Make dipping sauce from fish sauce, lime juice, water, and minced garlic
  7. Slice cucumber and tomato
  8. Arrange rice on serving plate
  9. Top with grilled pork chop
  10. Place fried egg on top
  11. Arrange cucumber, tomato, cilantro around plate
  12. Serve with pickled vegetables and dipping sauce
