Crab and Asparagus Stir-Fry

Ingredients

  • Fresh asparagus: 200g, cut diagonally
  • Crab meat (fresh or canned): 150g
  • Garlic, minced: 2-3 cloves
  • Ginger, minced: 1 tsp
  • Scallions, chopped: 2
  • Oyster sauce: 1 tbsp
  • Light soy sauce: ½ tbsp
  • Shaoxing wine: ½ tbsp
  • Sugar: ¼ tsp
  • Stock: ¼ cup
  • Cornstarch: ½ tsp
  • Water: 1 tbsp
  • Sesame oil: ½ tsp
  • Oil for cooking: 2 tbsp

Instructions

  1. Heat wok, add oil, stir-fry garlic and ginger briefly
  2. Add asparagus, stir-fry 2-3 minutes until tender-crisp
  3. Gently add crab meat, fold in carefully
  4. Add oyster sauce, soy sauce, Shaoxing wine, sugar
  5. Pour in stock, bring to simmer
  6. Mix cornstarch with water, stir in to thicken lightly
  7. Add scallions and sesame oil
  8. Toss gently and serve over steamed rice
