Cơm Chiên (Vietnamese Fried Rice)

Ingredients

  • 3 cups cooked rice (cold)
  • 8 oz pork belly
  • 8 oz shrimp
  • 1 whole carrots
  • 1 cup peas
  • 0.5 whole onion
  • 3 whole eggs
  • 3 cloves garlic
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 3 tbsp vegetable oil
  • 2 stalks scallions
  • 0.25 bunch cilantro

Instructions

  1. Dice pork belly finely
  2. Dice carrots and onion
  3. Mince garlic
  4. Heat oil in wok or large skillet
  5. Fry pork until crispy
  6. Push to side, add shrimp and cook until pink
  7. Add garlic, cook 30 seconds
  8. Add onion and carrot, stir-fry 2 minutes
  9. Add peas
  10. Push all to side, crack eggs into wok
  11. Scramble eggs, then mix with other ingredients
  12. Add cold rice, breaking up clumps
  13. Stir-fry for 3-4 minutes
  14. Season with fish sauce and soy sauce
  15. Garnish with sliced scallions and cilantro
  16. Serve hot
