Cơm Chiên (Vietnamese Fried Rice)

Ingredients
- 3 cups cooked rice (cold)
- 8 oz pork belly
- 8 oz shrimp
- 1 whole carrots
- 1 cup peas
- 0.5 whole onion
- 3 whole eggs
- 3 cloves garlic
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 3 tbsp vegetable oil
- 2 stalks scallions
- 0.25 bunch cilantro
Instructions
- Dice pork belly finely
- Dice carrots and onion
- Mince garlic
- Heat oil in wok or large skillet
- Fry pork until crispy
- Push to side, add shrimp and cook until pink
- Add garlic, cook 30 seconds
- Add onion and carrot, stir-fry 2 minutes
- Add peas
- Push all to side, crack eggs into wok
- Scramble eggs, then mix with other ingredients
- Add cold rice, breaking up clumps
- Stir-fry for 3-4 minutes
- Season with fish sauce and soy sauce
- Garnish with sliced scallions and cilantro
- Serve hot
