Dak Bokkeumtang (Korean Spicy Chicken Stew)

Ingredients

  • 2 lbs chicken thighs
  • 2 whole potatoes
  • 1 whole carrots
  • 1 whole onion
  • 4 cloves garlic
  • 3 tbsp gochugaru
  • 2 tbsp gochujang
  • 3 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 3 cups water
  • 3 stalks scallions

Instructions

  1. Cut chicken into pieces
  2. Cut potatoes, carrots, and onion into chunks
  3. Mince garlic
  4. Heat vegetable oil in pot
  5. Brown chicken pieces
  6. Add garlic and cook 1 minute
  7. Add gochujang and gochugaru, cook 1 minute
  8. Add water and bring to boil
  9. Add potatoes, carrots, and onion
  10. Simmer covered for 30 minutes
  11. Add soy sauce and sugar
  12. Simmer 10 more minutes
  13. Drizzle with sesame oil
  14. Serve hot with scallions
