Donburi (Rice Bowl with Egg and Chicken)

Ingredients

  • 3 cups cooked rice
  • 1.5 lbs chicken breast
  • 1 whole onion
  • 4 whole eggs
  • 1.5 cups dashi stock
  • 3 tbsp soy sauce
  • 3 tbsp mirin
  • 2 tbsp sake
  • 1 tsp sugar
  • 2 stalks scallions
  • 1 sheet nori seaweed
  • 1 tbsp sesame seeds

Instructions

  1. Slice chicken into bite-sized pieces
  2. Slice onion thinly
  3. Heat dashi in skillet
  4. Add chicken and onion, simmer until cooked (10 minutes)
  5. Add soy sauce, mirin, sake, and sugar
  6. Beat eggs in bowl
  7. Pour eggs slowly over chicken mixture
  8. Cook just until eggs are soft and slightly runny (1-2 minutes)
  9. Scoop rice into serving bowls
  10. Pour chicken-egg mixture over rice
  11. Garnish with scallions, nori, and sesame seeds
  12. Serve immediately
