Donburi (Rice Bowl with Egg and Chicken)

Ingredients
- 3 cups cooked rice
- 1.5 lbs chicken breast
- 1 whole onion
- 4 whole eggs
- 1.5 cups dashi stock
- 3 tbsp soy sauce
- 3 tbsp mirin
- 2 tbsp sake
- 1 tsp sugar
- 2 stalks scallions
- 1 sheet nori seaweed
- 1 tbsp sesame seeds
Instructions
- Slice chicken into bite-sized pieces
- Slice onion thinly
- Heat dashi in skillet
- Add chicken and onion, simmer until cooked (10 minutes)
- Add soy sauce, mirin, sake, and sugar
- Beat eggs in bowl
- Pour eggs slowly over chicken mixture
- Cook just until eggs are soft and slightly runny (1-2 minutes)
- Scoop rice into serving bowls
- Pour chicken-egg mixture over rice
- Garnish with scallions, nori, and sesame seeds
- Serve immediately
