Ingredients
- 1000 g lamb shoulder
- 500 g beef sirloin
- 200 g fat
- 1 large onion
- 4 cloves garlic
- 2 tsp paprika
- 1 tsp cumin
- 1 tsp coriander
- 1.5 tsp salt
- 0.5 tsp black pepper
- 4 tbsp olive oil
Instructions
- Mince lamb, beef, and fat together until very fine and sticky
- Finely mince onion and garlic, add to meat
- Mix in paprika, cumin, coriander, salt, and pepper
- Knead mixture for 5-10 minutes until it becomes sticky and holds together
- Form into large cone shape on a vertical rotisserie skewer (or use regular skewer in oven)
- Cook for 45-60 minutes, rotating frequently, basting with oil
- Meat should be golden brown and slightly charred on outside
- Slice thin pieces off as it cooks, or slice all at end
- Serve in pita with tomato, onion, parsley, and yogurt sauce
