Doner Kebab

Ingredients

  • 1000 g lamb shoulder
  • 500 g beef sirloin
  • 200 g fat
  • 1 large onion
  • 4 cloves garlic
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp coriander
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 4 tbsp olive oil

Instructions

  1. Mince lamb, beef, and fat together until very fine and sticky
  2. Finely mince onion and garlic, add to meat
  3. Mix in paprika, cumin, coriander, salt, and pepper
  4. Knead mixture for 5-10 minutes until it becomes sticky and holds together
  5. Form into large cone shape on a vertical rotisserie skewer (or use regular skewer in oven)
  6. Cook for 45-60 minutes, rotating frequently, basting with oil
  7. Meat should be golden brown and slightly charred on outside
  8. Slice thin pieces off as it cooks, or slice all at end
  9. Serve in pita with tomato, onion, parsley, and yogurt sauce
