Eggplant Curry (Gai Yang Makua)

Ingredients
- 4 whole Japanese eggplant
- 2 cups curry sauce (Japanese)
- 2 tbsp vegetable oil
- 1 whole onion
- 3 cloves garlic
- 2 whole potatoes
- 1 whole carrots
- 1 cup beef broth
- 1 tsp sugar
- 0.5 tsp salt
- 2 stalks scallions
Instructions
- Cut eggplant into chunks
- Cut potatoes and carrots into chunks
- Slice onion and mince garlic
- Heat oil in pot
- Sauté garlic and onion for 1 minute
- Add curry sauce and beef broth
- Bring to simmer
- Add potatoes and carrots
- Simmer for 15 minutes
- Add eggplant
- Simmer 10 more minutes until vegetables are tender
- Season with sugar and salt
- Serve over rice
- Garnish with scallions
