Falafel

Ingredients

  • 200 g dried chickpeas
  • 1 medium onion
  • 3 cloves garlic
  • 50 g parsley
  • 25 g cilantro
  • 50 g flour
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 500 ml olive oil

Instructions

  1. Soak dried chickpeas in water overnight, drain well
  2. Pulse soaked chickpeas with onion, garlic, parsley, and cilantro until fine crumbs
  3. Transfer to bowl, add flour, cumin, coriander, salt, and pepper
  4. Mix well, refrigerate for 1 hour
  5. Form into 24-30 small balls
  6. Heat olive oil to 170°C in deep pan
  7. Fry falafel 3-4 minutes, turning occasionally, until deep golden brown
  8. Drain on paper towels
  9. Serve warm in pita with lettuce, tomato, cucumber, and tahini sauce
