Ingredients
- 200 g dried chickpeas
- 1 medium onion
- 3 cloves garlic
- 50 g parsley
- 25 g cilantro
- 50 g flour
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp salt
- 0.5 tsp black pepper
- 500 ml olive oil
Instructions
- Soak dried chickpeas in water overnight, drain well
- Pulse soaked chickpeas with onion, garlic, parsley, and cilantro until fine crumbs
- Transfer to bowl, add flour, cumin, coriander, salt, and pepper
- Mix well, refrigerate for 1 hour
- Form into 24-30 small balls
- Heat olive oil to 170°C in deep pan
- Fry falafel 3-4 minutes, turning occasionally, until deep golden brown
- Drain on paper towels
- Serve warm in pita with lettuce, tomato, cucumber, and tahini sauce
