Filipino Sinigang (Tamarind Soup)

Ingredients

  • 1.5 kg Pork ribs or beef chuck, cubed
  • 8 cups Water
  • 0.5 cup Tamarind paste (or sinigang mix)
  • 1 large Radish (labanos), cubed
  • 2 medium Taro root (malanga), cubed
  • 1 lb Long beans, cut in 2-inch pieces
  • 1 whole Onion, sliced
  • 4 whole Garlic cloves, minced
  • 2 inch piece Ginger, sliced
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper
  • 1 bunch Leafy greens (spinach or bok choy)
  • 1 tbsp Fish sauce (patis)

Instructions

  1. Bring 8 cups water to boil. Add meat and blanch briefly, then drain and rinse meat.
  2. In clean pot, bring 8 cups fresh water to boil. Add blanched meat, onion, garlic, and ginger. Simmer 20 minutes until meat is partially cooked.
  3. Add tamarind paste (or sinigang mix) and stir well.
  4. Add radish and taro root cubes. Simmer 15 minutes.
  5. Add long beans and continue simmering 10 minutes until vegetables are tender.
  6. Add leafy greens and cook 2-3 minutes until wilted.
  7. Season with salt, pepper, and fish sauce to taste.
  8. Serve in large bowls with plenty of broth and rice on the side.
