Filipino Sinigang (Tamarind Soup)

Ingredients
- 1.5 kg Pork ribs or beef chuck, cubed
- 8 cups Water
- 0.5 cup Tamarind paste (or sinigang mix)
- 1 large Radish (labanos), cubed
- 2 medium Taro root (malanga), cubed
- 1 lb Long beans, cut in 2-inch pieces
- 1 whole Onion, sliced
- 4 whole Garlic cloves, minced
- 2 inch piece Ginger, sliced
- 1.5 tsp Salt
- 0.5 tsp Black pepper
- 1 bunch Leafy greens (spinach or bok choy)
- 1 tbsp Fish sauce (patis)
Instructions
- Bring 8 cups water to boil. Add meat and blanch briefly, then drain and rinse meat.
- In clean pot, bring 8 cups fresh water to boil. Add blanched meat, onion, garlic, and ginger. Simmer 20 minutes until meat is partially cooked.
- Add tamarind paste (or sinigang mix) and stir well.
- Add radish and taro root cubes. Simmer 15 minutes.
- Add long beans and continue simmering 10 minutes until vegetables are tender.
- Add leafy greens and cook 2-3 minutes until wilted.
- Season with salt, pepper, and fish sauce to taste.
- Serve in large bowls with plenty of broth and rice on the side.
