Fried Spring Rolls (Cha Gio)

Ingredients
- 24 pieces rice paper wrappers
- 1 lb ground pork
- 8 oz crab meat
- 4 oz rice vermicelli
- 1 whole carrots
- 0.5 whole onion
- 3 cloves garlic
- 2 tbsp fish sauce
- 0.5 tsp black pepper
- 2 quarts vegetable oil for frying
- 2 quarts water
Instructions
- Cook rice vermicelli until soft, drain and chop
- Mince garlic and onion
- Julienne carrots
- Heat oil in skillet, sauté garlic and onion for 1 minute
- Add ground pork, cook until browned
- Add crab meat, carrots, and vermicelli
- Season with fish sauce and black pepper
- Cool filling completely
- Briefly soak rice paper in water until pliable
- Place on damp towel
- Add 2 tbsp filling to bottom third of wrapper
- Roll bottom edge over filling
- Fold in sides
- Roll tightly until sealed
- Heat oil to 350°F in deep fryer
- Fry rolls until golden brown (3-4 minutes)
- Drain on paper towels
- Serve with dipping sauce
