Fried Spring Rolls (Cha Gio)

Ingredients

  • 24 pieces rice paper wrappers
  • 1 lb ground pork
  • 8 oz crab meat
  • 4 oz rice vermicelli
  • 1 whole carrots
  • 0.5 whole onion
  • 3 cloves garlic
  • 2 tbsp fish sauce
  • 0.5 tsp black pepper
  • 2 quarts vegetable oil for frying
  • 2 quarts water

Instructions

  1. Cook rice vermicelli until soft, drain and chop
  2. Mince garlic and onion
  3. Julienne carrots
  4. Heat oil in skillet, sauté garlic and onion for 1 minute
  5. Add ground pork, cook until browned
  6. Add crab meat, carrots, and vermicelli
  7. Season with fish sauce and black pepper
  8. Cool filling completely
  9. Briefly soak rice paper in water until pliable
  10. Place on damp towel
  11. Add 2 tbsp filling to bottom third of wrapper
  12. Roll bottom edge over filling
  13. Fold in sides
  14. Roll tightly until sealed
  15. Heat oil to 350°F in deep fryer
  16. Fry rolls until golden brown (3-4 minutes)
  17. Drain on paper towels
  18. Serve with dipping sauce
