Ga Luon (Vietnamese Steamed Chicken in Lotus Leaf)

Ingredients
- 1.5 lbs chicken breast
- 4 pieces dried lotus leaves
- 4 pieces dried mushrooms
- 8 oz shiitake mushrooms
- 4 cloves garlic
- 1 inch ginger
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- 2 stalks scallions
- 1 cup water
Instructions
- Soak lotus leaves in warm water for 30 minutes until soft
- Soak dried mushrooms in warm water for 30 minutes
- Chop chicken into bite-sized pieces
- Slice fresh mushrooms and shallots
- Mince garlic and ginger
- Mix fish sauce, soy sauce, sesame oil, and sugar
- Combine chicken, mushrooms, garlic, ginger, and sauce in bowl
- Let marinate for 15 minutes
- Place lotus leaf on work surface
- Add chicken mixture to center
- Fold lotus leaf around filling
- Place seam-side down in steamer
- Steam for 20-25 minutes until chicken is cooked through
- Carefully open lotus leaf (steam is hot)
- Garnish with sliced scallions
- Serve in lotus leaf
