Ga Luon (Vietnamese Steamed Chicken in Lotus Leaf)

Ingredients

  • 1.5 lbs chicken breast
  • 4 pieces dried lotus leaves
  • 4 pieces dried mushrooms
  • 8 oz shiitake mushrooms
  • 4 cloves garlic
  • 1 inch ginger
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 2 stalks scallions
  • 1 cup water

Instructions

  1. Soak lotus leaves in warm water for 30 minutes until soft
  2. Soak dried mushrooms in warm water for 30 minutes
  3. Chop chicken into bite-sized pieces
  4. Slice fresh mushrooms and shallots
  5. Mince garlic and ginger
  6. Mix fish sauce, soy sauce, sesame oil, and sugar
  7. Combine chicken, mushrooms, garlic, ginger, and sauce in bowl
  8. Let marinate for 15 minutes
  9. Place lotus leaf on work surface
  10. Add chicken mixture to center
  11. Fold lotus leaf around filling
  12. Place seam-side down in steamer
  13. Steam for 20-25 minutes until chicken is cooked through
  14. Carefully open lotus leaf (steam is hot)
  15. Garnish with sliced scallions
  16. Serve in lotus leaf
