Ingredients
- Chicken thigh, cubed: 400g
- Light soy sauce (for marinade): 1 tbsp
- Shaoxing wine (for marinade): 1 tbsp
- Cornstarch (for marinade): 1.5 tbsp
- Salt (for marinade): pinch
- Oil (for marinade): 1 tbsp
- Dried red chilies, cut in halves: 6-8
- Garlic, minced: 3-4 cloves
- Ginger, minced: 1 tbsp
- Scallions, chopped: 2-3
- Sichuan peppercorns: ½ tsp optional
- Light soy sauce (for sauce): 1.5 tbsp
- Chinkiang vinegar: 1 tbsp
- Sugar: 1.5-2 tbsp
- Shaoxing wine (for sauce): 1 tbsp
- Cornstarch (for sauce): 1 tsp
- Water: 3 tbsp
- Oil for cooking: 3-4 tbsp
Instructions
- Marinate chicken with soy, wine, cornstarch, salt, oil for 15 minutes
- Heat wok with oil, stir-fry chicken until golden and cooked, remove
- In same wok, stir-fry dried chilies, garlic, ginger, Sichuan peppercorns briefly
- Mix sauce ingredients, return chicken to wok
- Pour in sauce and toss until glossy and well-coated
- Add scallions, toss once more
- Serve immediately with white rice
