Ingredients

  • 1000 g beef chuck
  • 4 large onion
  • 2 medium carrot
  • 4 medium potato
  • 3 tbsp paprika
  • 2 tbsp tomato paste
  • 1000 ml beef broth
  • 4 tbsp olive oil
  • 1 tsp caraway seeds
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 500 ml water

Instructions

  1. Cut beef into 2-3cm cubes, pat dry
  2. Dice onions, carrots, and potatoes
  3. Heat olive oil in large pot over high heat
  4. Brown beef in batches, don't overcrowd, set aside
  5. Add diced onions, sauté until soft and caramelized
  6. Reduce heat, add paprika and stir for 1 minute to bloom
  7. Add tomato paste, stir well
  8. Return beef to pot, add beef broth and water
  9. Bring to boil, then reduce heat and simmer covered for 1.5 hours
  10. Add carrots and potatoes, caraway seeds, salt, and pepper
  11. Simmer for another 45 minutes until beef and vegetables are very tender
  12. Adjust seasonings and serve hot
