Gyoza (Pork Dumplings)

Ingredients
- 30 pieces gyoza wrappers
- 1 lb ground pork
- 2 cups cabbage
- 3 cloves garlic
- 0.5 inch ginger
- 2 stalks scallions
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 0.25 tsp salt
- 2 tbsp vegetable oil
- 0.5 cup water
- 2 tbsp rice vinegar
- 1 tsp chili oil
Instructions
- Finely chop cabbage and let sit with salt for 10 minutes
- Squeeze out excess moisture from cabbage
- Mince garlic, ginger, and scallions
- Mix ground pork, cabbage, garlic, ginger, scallions, soy sauce, sesame oil, and salt
- Place 1 tsp filling in center of each wrapper
- Wet edges with water
- Fold wrapper in half to create semicircle
- Fold one corner to center and pleat 3-4 times
- Press edges to seal
- Heat oil in skillet over medium-high heat
- Place gyoza flat-side down in skillet
- Cook until bottoms are golden (2-3 minutes)
- Add water and cover
- Steam for 5-7 minutes until water evaporates
- Uncover and cook 1 more minute
- Mix rice vinegar and chili oil for dipping sauce
- Serve with dipping sauce
