Gyoza (Pork Dumplings)

Ingredients

  • 30 pieces gyoza wrappers
  • 1 lb ground pork
  • 2 cups cabbage
  • 3 cloves garlic
  • 0.5 inch ginger
  • 2 stalks scallions
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 0.25 tsp salt
  • 2 tbsp vegetable oil
  • 0.5 cup water
  • 2 tbsp rice vinegar
  • 1 tsp chili oil

Instructions

  1. Finely chop cabbage and let sit with salt for 10 minutes
  2. Squeeze out excess moisture from cabbage
  3. Mince garlic, ginger, and scallions
  4. Mix ground pork, cabbage, garlic, ginger, scallions, soy sauce, sesame oil, and salt
  5. Place 1 tsp filling in center of each wrapper
  6. Wet edges with water
  7. Fold wrapper in half to create semicircle
  8. Fold one corner to center and pleat 3-4 times
  9. Press edges to seal
  10. Heat oil in skillet over medium-high heat
  11. Place gyoza flat-side down in skillet
  12. Cook until bottoms are golden (2-3 minutes)
  13. Add water and cover
  14. Steam for 5-7 minutes until water evaporates
  15. Uncover and cook 1 more minute
  16. Mix rice vinegar and chili oil for dipping sauce
  17. Serve with dipping sauce
