Ingredients
- 2 cups idli rice
- 0.5 cup urad dal (whole/deskinned)
- 0.25 tsp fenugreek seeds
- 2-3 tbsp thick poha, optional
- Salt to taste
- Water as needed
Instructions
- Wash and soak rice + poha together for 4-5 hours
- Wash and soak urad dal + fenugreek for 4-5 hours
- Grind urad dal to fluffy, smooth batter adding water gradually
- Grind rice (and poha) to slightly coarse batter
- Mix both, add salt, beat well, and ferment 8-12 hours until well risen
- Grease idli plates
- Pour batter and steam 10-12 minutes until knife comes out clean
- Rest 2 minutes then unmold
- Serve hot with coconut chutney and sambar
