Japchae (Korean Glass Noodles with Vegetables)

Ingredients

  • 8 oz sweet potato glass noodles
  • 8 oz beef sirloin
  • 4 oz spinach
  • 1 whole carrots
  • 8 oz mushrooms
  • 0.5 whole onion
  • 3 tbsp soy sauce
  • 1 tbsp sugar
  • 3 tbsp sesame oil
  • 3 cloves garlic
  • 2 tbsp vegetable oil
  • 2 tbsp sesame seeds
  • 2 stalks scallions

Instructions

  1. Cook glass noodles according to package directions
  2. Drain and toss with 1 tbsp sesame oil to prevent sticking
  3. Thinly slice beef
  4. Marinate beef in 1 tbsp soy sauce and minced garlic (10 minutes)
  5. Cook beef in hot oil until browned, set aside
  6. Blanch spinach and squeeze dry
  7. Julienne carrots and onion
  8. Slice mushrooms
  9. Sauté each vegetable separately, season with salt
  10. Mix 2 tbsp soy sauce, sugar, and 2 tbsp sesame oil in large bowl
  11. Combine cooked noodles, beef, and vegetables in bowl
  12. Toss to coat with sauce
  13. Garnish with sesame seeds and scallions
  14. Serve warm or at room temperature
