Japchae (Korean Glass Noodles with Vegetables)

Ingredients
- 8 oz sweet potato glass noodles
- 8 oz beef sirloin
- 4 oz spinach
- 1 whole carrots
- 8 oz mushrooms
- 0.5 whole onion
- 3 tbsp soy sauce
- 1 tbsp sugar
- 3 tbsp sesame oil
- 3 cloves garlic
- 2 tbsp vegetable oil
- 2 tbsp sesame seeds
- 2 stalks scallions
Instructions
- Cook glass noodles according to package directions
- Drain and toss with 1 tbsp sesame oil to prevent sticking
- Thinly slice beef
- Marinate beef in 1 tbsp soy sauce and minced garlic (10 minutes)
- Cook beef in hot oil until browned, set aside
- Blanch spinach and squeeze dry
- Julienne carrots and onion
- Slice mushrooms
- Sauté each vegetable separately, season with salt
- Mix 2 tbsp soy sauce, sugar, and 2 tbsp sesame oil in large bowl
- Combine cooked noodles, beef, and vegetables in bowl
- Toss to coat with sauce
- Garnish with sesame seeds and scallions
- Serve warm or at room temperature
