Kare-Raisu (Japanese Curry Rice)

Ingredients

  • 1.5 lbs beef sirloin
  • 3 whole potatoes
  • 2 whole carrots
  • 2 whole onions
  • 2 tbsp vegetable oil
  • 2 cups beef broth
  • 2 cups water
  • 8 oz Japanese curry roux
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 4 cups cooked rice
  • 2 tbsp pickled ginger

Instructions

  1. Cut beef into chunks
  2. Cut potatoes, carrots, and onions into chunks
  3. Heat oil in pot
  4. Brown beef
  5. Add onions and sauté until soft
  6. Add broth and water
  7. Bring to boil, then reduce to simmer
  8. Add potatoes and carrots
  9. Simmer for 20-30 minutes until vegetables are tender
  10. Break curry roux into pieces
  11. Stir in curry roux until dissolved
  12. Simmer 5 more minutes
  13. Season with salt and pepper
  14. Serve over hot rice
  15. Garnish with pickled ginger
