Kare-Raisu (Japanese Curry Rice)

Ingredients
- 1.5 lbs beef sirloin
- 3 whole potatoes
- 2 whole carrots
- 2 whole onions
- 2 tbsp vegetable oil
- 2 cups beef broth
- 2 cups water
- 8 oz Japanese curry roux
- 0.5 tsp salt
- 0.5 tsp black pepper
- 4 cups cooked rice
- 2 tbsp pickled ginger
Instructions
- Cut beef into chunks
- Cut potatoes, carrots, and onions into chunks
- Heat oil in pot
- Brown beef
- Add onions and sauté until soft
- Add broth and water
- Bring to boil, then reduce to simmer
- Add potatoes and carrots
- Simmer for 20-30 minutes until vegetables are tender
- Break curry roux into pieces
- Stir in curry roux until dissolved
- Simmer 5 more minutes
- Season with salt and pepper
- Serve over hot rice
- Garnish with pickled ginger
