Ingredients
- 500 g kefir
- 2 medium cucumber
- 4 whole radish
- 3 tbsp dill
- 4 whole scallion
- 1 medium potato
- 0.5 tsp salt
- 0.25 tsp black pepper
- 500 ml ice water
Instructions
- Boil potato until tender, cool and dice
- Dice cucumber and radish thinly
- Slice scallion into rings
- Combine kefir with ice water in large bowl
- Add diced vegetables and scallion
- Stir in fresh dill, season with salt and pepper
- Chill well before serving
- Serve as cold soup in summer
