Kefir Soup

Ingredients

  • 500 g kefir
  • 2 medium cucumber
  • 4 whole radish
  • 3 tbsp dill
  • 4 whole scallion
  • 1 medium potato
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 500 ml ice water

Instructions

  1. Boil potato until tender, cool and dice
  2. Dice cucumber and radish thinly
  3. Slice scallion into rings
  4. Combine kefir with ice water in large bowl
  5. Add diced vegetables and scallion
  6. Stir in fresh dill, season with salt and pepper
  7. Chill well before serving
  8. Serve as cold soup in summer
