Korean Braised Beef Short Ribs (Galbi Jjim)

Ingredients
- 2 lbs beef short ribs
- 0.5 cup soy sauce
- 3 tbsp brown sugar
- 6 cloves garlic
- 1 inch ginger
- 3 cups water
- 2 tbsp sesame oil
- 2 whole carrots
- 2 whole potatoes
- 8 oz mushrooms
- 3 stalks scallions
- 2 tbsp sesame seeds
- 0.5 whole pear
Instructions
- Blanch beef ribs in boiling water for 5 minutes to remove impurities
- Drain and rinse ribs
- Minced ginger and garlic
- Cut pear in half and grate
- Heat sesame oil in large pot
- Add ginger and garlic, cook 1 minute
- Add ribs and brown lightly
- Add soy sauce, brown sugar, grated pear, and water
- Cut carrots and potatoes into chunks
- Add to pot
- Cover and simmer for 1.5-2 hours until meat is tender
- Add mushrooms in last 20 minutes
- Garnish with scallions and sesame seeds
- Serve over rice
