Korean Braised Beef Short Ribs (Galbi Jjim)

Ingredients

  • 2 lbs beef short ribs
  • 0.5 cup soy sauce
  • 3 tbsp brown sugar
  • 6 cloves garlic
  • 1 inch ginger
  • 3 cups water
  • 2 tbsp sesame oil
  • 2 whole carrots
  • 2 whole potatoes
  • 8 oz mushrooms
  • 3 stalks scallions
  • 2 tbsp sesame seeds
  • 0.5 whole pear

Instructions

  1. Blanch beef ribs in boiling water for 5 minutes to remove impurities
  2. Drain and rinse ribs
  3. Minced ginger and garlic
  4. Cut pear in half and grate
  5. Heat sesame oil in large pot
  6. Add ginger and garlic, cook 1 minute
  7. Add ribs and brown lightly
  8. Add soy sauce, brown sugar, grated pear, and water
  9. Cut carrots and potatoes into chunks
  10. Add to pot
  11. Cover and simmer for 1.5-2 hours until meat is tender
  12. Add mushrooms in last 20 minutes
  13. Garnish with scallions and sesame seeds
  14. Serve over rice
