Korean Fried Chicken (Chimaek)

Ingredients
- 2 lbs chicken pieces
- 1 cup all-purpose flour
- 0.5 cup cornstarch
- 1 tsp baking soda
- 1 tsp salt
- 0.5 tsp black pepper
- 2 quarts vegetable oil for frying
- 4 cloves garlic
- 1 inch ginger
- 3 tbsp soy sauce
- 3 tbsp water
- 1 tbsp sugar
- 2 tbsp sesame seeds
- 2 stalks scallions
Instructions
- Pat chicken dry with paper towels
- Mix flour, cornstarch, baking soda, salt, and pepper
- Toss chicken in flour mixture
- Heat oil to 350°F
- Fry chicken in batches for 15-18 minutes until crispy
- Drain on paper towels
- Mince garlic and ginger
- In saucepan, heat soy sauce, water, sugar, garlic, and ginger
- Simmer 5 minutes
- Toss fried chicken in sauce
- Garnish with sesame seeds and scallions
- Serve immediately with beer or soft drinks
