Korean Fried Chicken (Chimaek)

Ingredients

  • 2 lbs chicken pieces
  • 1 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 tsp baking soda
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 quarts vegetable oil for frying
  • 4 cloves garlic
  • 1 inch ginger
  • 3 tbsp soy sauce
  • 3 tbsp water
  • 1 tbsp sugar
  • 2 tbsp sesame seeds
  • 2 stalks scallions

Instructions

  1. Pat chicken dry with paper towels
  2. Mix flour, cornstarch, baking soda, salt, and pepper
  3. Toss chicken in flour mixture
  4. Heat oil to 350°F
  5. Fry chicken in batches for 15-18 minutes until crispy
  6. Drain on paper towels
  7. Mince garlic and ginger
  8. In saucepan, heat soy sauce, water, sugar, garlic, and ginger
  9. Simmer 5 minutes
  10. Toss fried chicken in sauce
  11. Garnish with sesame seeds and scallions
  12. Serve immediately with beer or soft drinks
