Lebanese Hummus (Chickpea Dip)

Ingredients
- 2 cans (15 oz each) Canned chickpeas
- 0.33 cup Tahini (sesame paste)
- 0.33 cup Fresh lemon juice
- 2 whole Garlic cloves
- 0.5 tsp Salt
- 2 tbsp Water
- 2 tbsp Olive oil
- 0.5 tsp Paprika (for garnish)
- 2 tbsp Pine nuts (for garnish)
- 1 tbsp Fresh parsley (for garnish)
Instructions
- Drain and rinse canned chickpeas, reserving liquid.
- In food processor, combine chickpeas, tahini, lemon juice, garlic, and salt.
- Blend until smooth, adding water and more lemon juice as needed to reach desired creamy consistency.
- Taste and adjust salt and lemon juice as needed.
- Transfer to serving bowl.
- Drizzle with olive oil and sprinkle with paprika, pine nuts, and parsley.
- Serve with pita bread, fresh vegetables, or as part of a mezze platter.
