Lebanese Hummus (Chickpea Dip)

Ingredients

  • 2 cans (15 oz each) Canned chickpeas
  • 0.33 cup Tahini (sesame paste)
  • 0.33 cup Fresh lemon juice
  • 2 whole Garlic cloves
  • 0.5 tsp Salt
  • 2 tbsp Water
  • 2 tbsp Olive oil
  • 0.5 tsp Paprika (for garnish)
  • 2 tbsp Pine nuts (for garnish)
  • 1 tbsp Fresh parsley (for garnish)

Instructions

  1. Drain and rinse canned chickpeas, reserving liquid.
  2. In food processor, combine chickpeas, tahini, lemon juice, garlic, and salt.
  3. Blend until smooth, adding water and more lemon juice as needed to reach desired creamy consistency.
  4. Taste and adjust salt and lemon juice as needed.
  5. Transfer to serving bowl.
  6. Drizzle with olive oil and sprinkle with paprika, pine nuts, and parsley.
  7. Serve with pita bread, fresh vegetables, or as part of a mezze platter.
