Lomo Saltado (Stir-Fried Beef)

Ingredients
- 600g beef sirloin or loin, thinly sliced
- 4 tbsp oil or butter
- 1 red onion, cut into thick strips
- 4 cloves garlic, minced
- 2 ají amarillo peppers, deseeded and chopped (or 1 yellow bell pepper + 1 tsp chili paste)
- 2 medium tomatoes, cut into wedges
- ½ cup soy sauce
- 3 tbsp rice vinegar
- 1 tsp cumin
- Salt and pepper
- 3 scallions, cut into 4cm pieces
- Fresh cilantro
- For serving: white rice, fried potatoes
Instructions
- 1. Pat beef dry and season with salt and pepper.
- 2. Heat 2 tbsp oil in a large pan or wok until very hot.
- 3. In batches, quickly sear beef 1-2 minutes per side to rare/medium-rare. Remove to a plate.
- 4. Add remaining oil to the pan. Sauté onion and garlic 2-3 minutes until softened.
- 5. Add ají amarillo and tomato wedges. Stir-fry 2 minutes.
- 6. Return beef to pan with any juices.
- 7. Add soy sauce, rice vinegar, and cumin. Toss well, cooking 2-3 minutes to warm through and marry flavors.
- 8. Add scallions. Toss briefly (30 seconds).
- 9. Remove from heat. Top with fresh cilantro.
- 10. Serve over white rice with fried potato wedges on the side.
