Lulas Recheadas (Turkish Squid)

Ingredients
- 1000 g squid
- 100 g rice
- 1 medium onion
- 50 g pine nut
- 30 g parsley
- 15 g mint
- 5 tbsp olive oil
- 200 ml tomato sauce
- 1 tsp salt
- 0.5 tsp black pepper
- 300 ml water
Instructions
- Clean squid carefully, remove heads and tentacles, keep tubes
- Chop tentacles finely, sauté with diced onion in olive oil
- Add rice and toast for 1-2 minutes
- Add chopped parsley, mint, and pine nuts
- Cook for 2-3 minutes, remove from heat
- Fill squid tubes loosely with rice mixture (rice will expand)
- Secure openings with toothpicks
- Arrange filled squid in baking dish
- Mix tomato sauce with water, pour around squid
- Bake at 160°C for 45-50 minutes
- Squid should be tender and sauce reduced
