Lulas Recheadas (Turkish Squid)

Ingredients

  • 1000 g squid
  • 100 g rice
  • 1 medium onion
  • 50 g pine nut
  • 30 g parsley
  • 15 g mint
  • 5 tbsp olive oil
  • 200 ml tomato sauce
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 300 ml water

Instructions

  1. Clean squid carefully, remove heads and tentacles, keep tubes
  2. Chop tentacles finely, sauté with diced onion in olive oil
  3. Add rice and toast for 1-2 minutes
  4. Add chopped parsley, mint, and pine nuts
  5. Cook for 2-3 minutes, remove from heat
  6. Fill squid tubes loosely with rice mixture (rice will expand)
  7. Secure openings with toothpicks
  8. Arrange filled squid in baking dish
  9. Mix tomato sauce with water, pour around squid
  10. Bake at 160°C for 45-50 minutes
  11. Squid should be tender and sauce reduced
