Medu Vada

Ingredients

  • 1 cup urad dal
  • 1-2 tbsp rice flour, optional
  • 1 tsp finely chopped ginger
  • 1-2 green chilli, finely chopped
  • Few curry leaves, chopped
  • 0.5 tsp black pepper
  • 0.5 tsp cumin
  • Salt to taste
  • Oil for deep frying

Instructions

  1. Wash and soak urad dal 3-4 hours
  2. Grind with very little water to thick, fluffy batter
  3. Add salt, ginger, chilli, curry leaves, pepper, cumin and rice flour
  4. Mix well
  5. Heat oil on medium
  6. Wet hand, take ball of batter, make hole in center (vada shape)
  7. Slide gently into oil, fry until golden and crisp, turning occasionally
  8. Drain on paper
  9. Serve hot with coconut chutney and sambar/rasam
