Mi Xao Lan (Vietnamese Chow Mein)

Ingredients

  • 1 lb egg noodles
  • 1 whole chicken breast
  • 8 oz shrimp
  • 2 whole carrots
  • 2 whole bell peppers
  • 1 whole onion
  • 4 cloves garlic
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 3 tbsp vegetable oil
  • 2 stalks scallions
  • 1 tbsp sesame oil

Instructions

  1. Cook noodles until just tender, drain and set aside
  2. Slice chicken into bite-sized pieces
  3. Julienne carrots and bell peppers
  4. Slice onion and mince garlic
  5. Heat oil in wok or large skillet over high heat
  6. Stir-fry chicken until cooked through
  7. Add shrimp and cook until pink (2 minutes)
  8. Add garlic and cook 30 seconds
  9. Add vegetables and stir-fry for 3 minutes
  10. Add noodles to wok
  11. Mix soy sauce, oyster sauce, fish sauce, and sugar
  12. Pour sauce over noodles and toss
  13. Cook for 2 more minutes to heat through
  14. Drizzle with sesame oil
  15. Garnish with sliced scallions
  16. Serve immediately
