Mi Xao Lan (Vietnamese Chow Mein)

Ingredients
- 1 lb egg noodles
- 1 whole chicken breast
- 8 oz shrimp
- 2 whole carrots
- 2 whole bell peppers
- 1 whole onion
- 4 cloves garlic
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tsp sugar
- 3 tbsp vegetable oil
- 2 stalks scallions
- 1 tbsp sesame oil
Instructions
- Cook noodles until just tender, drain and set aside
- Slice chicken into bite-sized pieces
- Julienne carrots and bell peppers
- Slice onion and mince garlic
- Heat oil in wok or large skillet over high heat
- Stir-fry chicken until cooked through
- Add shrimp and cook until pink (2 minutes)
- Add garlic and cook 30 seconds
- Add vegetables and stir-fry for 3 minutes
- Add noodles to wok
- Mix soy sauce, oyster sauce, fish sauce, and sugar
- Pour sauce over noodles and toss
- Cook for 2 more minutes to heat through
- Drizzle with sesame oil
- Garnish with sliced scallions
- Serve immediately
