Miso Ramen

Ingredients

  • 4 quarts pork or chicken broth
  • 6 tbsp miso paste
  • 2 tbsp butter
  • 2 tbsp soy sauce
  • 1 tbsp sake
  • 1 tbsp mirin
  • 4 cloves garlic
  • 1 inch ginger
  • 1 lb ramen noodles
  • 4 pieces soft-boiled eggs
  • 1 cup grilled corn
  • 2 bunches scallions
  • 1 cup bean sprouts
  • 2 sheets nori sheets

Instructions

  1. Heat broth in pot
  2. Mince garlic and ginger, sauté in butter for 1 minute
  3. Add to broth
  4. Dissolve miso paste in small bowl with warm broth
  5. Stir miso mixture back into pot
  6. Add soy sauce, sake, and mirin
  7. Simmer for 10 minutes
  8. Cook ramen noodles separately
  9. Warm bowls with hot broth
  10. Divide noodles among bowls
  11. Pour hot miso broth over noodles
  12. Top with egg, corn, bean sprouts, and scallions
  13. Serve immediately
