Miso Soup

Ingredients
- 4 cups dashi stock
- 4 tbsp white miso paste
- 8 oz silken tofu
- 2 tbsp seaweed (wakame)
- 2 stalks scallions
- 2 tbsp bonito flakes
Instructions
- Bring dashi to boil in pot
- Cube tofu
- Soak seaweed in warm water for 5 minutes, drain
- Turn dashi heat to low
- Dissolve miso paste in small bowl with warm dashi
- Stir miso mixture back into pot
- Do NOT boil after adding miso
- Add tofu and seaweed
- Heat gently for 2 minutes
- Serve in small bowls
- Garnish with sliced scallions
- Top with bonito flakes
