Miso Soup

Ingredients

  • 4 cups dashi stock
  • 4 tbsp white miso paste
  • 8 oz silken tofu
  • 2 tbsp seaweed (wakame)
  • 2 stalks scallions
  • 2 tbsp bonito flakes

Instructions

  1. Bring dashi to boil in pot
  2. Cube tofu
  3. Soak seaweed in warm water for 5 minutes, drain
  4. Turn dashi heat to low
  5. Dissolve miso paste in small bowl with warm dashi
  6. Stir miso mixture back into pot
  7. Do NOT boil after adding miso
  8. Add tofu and seaweed
  9. Heat gently for 2 minutes
  10. Serve in small bowls
  11. Garnish with sliced scallions
  12. Top with bonito flakes
