Ingredients
- Mixed vegetables (bok choy, napa cabbage, broccoli, snow peas, carrots, mushrooms, zucchini): 4-5 cups sliced
- Garlic, minced: 2-3 cloves
- Ginger, minced: 1 tsp optional
- Dried chilies: 1-2 optional
- Stock: ½-⅔ cup
- Light soy sauce: 1-2 tbsp
- Sugar: 1 tsp optional
- Sesame oil: 1 tsp
- Cornstarch: 1-2 tsp
- Water: 1-2 tbsp
- Oil for cooking: 2-3 tbsp
Instructions
- Heat wok, add oil, stir-fry garlic, ginger, dried chilies briefly
- Add harder vegetables (carrot, broccoli stems) first, cook 1-2 minutes
- Add softer vegetables (leaves, mushrooms, zucchini), toss 1-2 minutes more
- Add stock, soy sauce, and sugar, bring to simmer
- Stir cornstarch slurry, cook until lightly thickened
- Finish with sesame oil, adjust soy and serve
