Mixed Vegetable Stir-Fry

Ingredients

  • Mixed vegetables (bok choy, napa cabbage, broccoli, snow peas, carrots, mushrooms, zucchini): 4-5 cups sliced
  • Garlic, minced: 2-3 cloves
  • Ginger, minced: 1 tsp optional
  • Dried chilies: 1-2 optional
  • Stock: ½-⅔ cup
  • Light soy sauce: 1-2 tbsp
  • Sugar: 1 tsp optional
  • Sesame oil: 1 tsp
  • Cornstarch: 1-2 tsp
  • Water: 1-2 tbsp
  • Oil for cooking: 2-3 tbsp

Instructions

  1. Heat wok, add oil, stir-fry garlic, ginger, dried chilies briefly
  2. Add harder vegetables (carrot, broccoli stems) first, cook 1-2 minutes
  3. Add softer vegetables (leaves, mushrooms, zucchini), toss 1-2 minutes more
  4. Add stock, soy sauce, and sugar, bring to simmer
  5. Stir cornstarch slurry, cook until lightly thickened
  6. Finish with sesame oil, adjust soy and serve
